Carrot Cake Oatmeal

This carrot cake oatmeal is a delicious and easy way to incorporate veggies into your breakfast. These are kid friendly and are super quick to make. The recipe makes one bowl, so duplicate ingredients for multiple servings. Use milk and maple syrup for a sweeter version, but these taste great with water as well. Don’t have a vegetable grater? You can use a peeler to get thin ribbons of carrots and then chop finely with a knife.

Carrot Curry Soup

This sweet and savory curry carrot soup is perfect for a chilly fall day.  This recipe makes 6 servings. Have any leftover or stale bread lying around? Make croutons to add to the soup right before serving. Dice your bread in small squares, Toss with oil or butter and seasonings (ex: salt, pepper, and garlic powder), Spread out on a baking sheet and bake until crispy.
