Cinnamon Apples with Maple Syrup

There are apples and then there are Vermont grown apples! I have spent many years picking (and sampling) my way through many of our amazing orchards, leaving with a full belly and plans for pies, apple sauce, chutneys and apple cakes swirling through my head. With more than 150 varieties grown in Vermont there are many flavors, colors, and textures to explore. A Vermont orchard is a foodie’s paradise. With great joy this week, I took my first bite of a delicious Honey Crisp Apple from Champlain Orchards, the first of the season. What a celebration! Our simple recipe for Cinnamon Apples with Maple Syrup makes the perfect after-school snack, dessert or mid-day pick me up.

Vermont “Champ”- Mashed Potatoes with Garlic Scapes

Champ is a dish that is native to Northern Ireland. It is made by blending scallions with creamy mashed potatoes. Here in Vermont, we relate to Champ as a lake monster living in Lake Champlain! Our recipe replaces the traditional scallion for a Vermont favorite, garlic scapes. This dish twist, Vermont “Champ”, is a fun play on words that is sure to bring a smile to the table!

Grilled Garlic Scapes

Garlic scapes are the tender stem and flower bud of a hardneck garlic plant.   Garlic scapes have a greener taste than garlic bulbs, they have a unique flavor profile, blending onion, scallion, and garlic.  The texture is close to that of asparagus, making it ideal for grilling.  Grilled Garlic Scapes can be enjoyed as a side dish, an ingredient (they are great in an omelet) or as a topping for pizza, burgers, and so much more.

Grilled Asparagus

Asparagus, Vermont's fancy vegetable! Harvested in spring and early summer, this perennial (lives for 12 or more growing seasons) requires little more than fertile, loose, well-drained soil to plant its roots, and a good 8 hours of full sunlight each day.
