Roasted Rainbow Radishes are a burst of sunlight on a rainy day! Purple daikon and watermelon radishes pair up in this beautiful roasted radish dish. A drizzle of olive oil, and a sprinkle of salt and pepper is all it takes to make this rainbow appear. Purple daikon and watermelon radishes are part of the winter radish family; winter radishes are sowed in late summer or early fall and take 8-10 weeks to mature and are ready to harvest before winter sets in, making them perfect for winter storage.

If you are thinking Brussels sprouts have gotten better over the years, you’re right! In the 18th century Brussels sprouts made their way to the United States from Brussels. They were valued for their nutritional properties and their cabbage-like taste, their popularity (yes, popularity) spread across the Americas. In the late 1960’s flavor was sacrificed for ease of harvesting; the result was a plant that matured evenly but tasted incredibly bitter. Thankfully and successfully, in the 90’s effort was put into correcting this flavor injustice and the modern-day Brussels sprout was born. So, if a past experience with these little crucifers left a bad taste in your mouth, give them a second chance. Roasted Butternut Soup

In my kitchen, when the weather turns cold, the oven turns on!  Roasting vegetables to make soup is a favorite of mine.   Roasting is an easy technique that enhances the flavor of vegetables by caramelizing the natural sugars, resulting in a deeper more intense flavor. Roasted Butternut Soup is great when topped with croutons, a splash of cream, or toasted nuts/seeds.  This soup is great with sandwiches, as a meal starter or a light snack.
