Panko Crusted Baked Tomato Slices

An abundance of late summer tomatoes and a chilly evening inspired this recipe. After a rather dormant summer for my oven, the cool nights began to roll in signaling the beginning of the menu changes. With the addition of a few simple ingredients and a good dose of love the tomatoes were transformed into Panko Crusted Baked Tomato Slices, the result was spectacular! After the recipe photo shoot there were plenty of volunteers to help with the "clean-up".
