This pasta is a simple and delicious summer meal or side dish for when the cherry tomatoes keep coming. The cherry tomatoes make the perfect easy pasta sauce with just a few extra added ingredients. Add grilled chicken for protein, or enjoy as is!

Ingredients:

  • 8 Oz pasta
  • 3 Tbsp olive oil
  • 2 Pints cherry tomatoes
  • 2 Cloves garlic, minced
  • 1 Tbsp balsamic vinegar
  • 1/4 Cup pasta water
  • Salt and pepper, to taste
  • Optional: 1/3 cup parmesan cheese and fresh basil
Main Ingredient(s): Cherry Tomatoes, Garlic

* Whole peeled garlic cloves may be substituted.

Steps:

  • Cook the pasta as directed on the package. Before draining, save 1/4 cup pasta water and set aside.

  • Heat 2 Tbsp olive oil in a large skillet over medium high heat, add garlic and stir until fragrant, 1-2 minutes. Add tomatoes to pan. Cook for 3-4 minutes until blistered, shaking the pan to rotate the tomatoes. Lower heat and ass balsamic vinegar, and salt and pepper to taste.

  • Deglaze the pan with ¼ cup pasta water, scraping the pan with a spoon to release the flavor of the tomato juices. Turn off the heat.

  • Add pasta to pan. Can add in parmesan cheese and fresh basil!
