Brighten a winter day with a bowl of sunshine! Honey-Orange Mashed Sweet Potatoes provide a double boost of Vitamin C with a side of “Wow, that’s good”. The earthy sweetness of the potato is elevated by the citrusy sweetness of the orange juice and sharpness of the zest. This dish pairs well with roast chicken and is great with grilled salmon, too. How to Select and Store Sweet Potatoes: Choose sweet potatoes that are small to medium in size, and firm in texture. The skin should be smooth (no cuts or cracks). To store, avoid the refrigerator. Sweet potatoes store best at 55° in a brown paper bag. Will keep 1 month or more when stored properly.

Ingredients:

  • 2 medium sweet potatoes, peeled and cubed
  • 1 orange, zested and juiced (about 1/2 cup juice and 1/4 tsp. zest)
  • 1 Tbsp honey
  • 1 tsp Mrs Dash (no salt alternative)
  • 1 Tbsp olive oil
  • pepper, to taste
  • cinnamon, optional

Steps:

  • Place potatoes into large pot and fill with enough water to cover. Bring to a boil and cook until tender.
  • Drain well.
  • Add 1/4 to 1/2 cup orange juice, and 1/4 tsp. of orange zest, Mrs Dash, honey, olive oil, and pepper to potatoes and mash until smooth.
  • Adjust seasoning. Dust with cinnamon.
  • Serve hot.
