These skillet peppers and onions are delicious and easy to incorporate into so many dishes. Try adding sausage, or chicken and fajita seasoning. These also go great in a breakfast burrito with eggs and black beans. Check out our VT Fresh Quick Tip Video on how to slice peppers.

Ingredients:

  • 1Tbsp olive oil
  • 2 Cups thinly sliced bell peppers (any color)
  • 1 Cup sweet onion (sliced vertically)
  • 1 Tsp minced garlic
  • 1/4 Tsp salt
  • 1/4 Tsp black pepper
  • 1/2 Tsp dried rosemary (optional)
Main Ingredient(s): Onions, Peppers

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add peppers and onion and cook about 10 minutes or until onion is tender, stirring frequently.
  • Add garlic, rosemary, salt, and black pepper; cook for 2 minutes, stirring frequently. Serve and enjoy!
  • Note: For a touch of heat, add a few dashes of your favorite hot sauce or a pinch of ground red pepper.
