This Cucumber salad is a great side dish for a hot summer day! Cucumbers are delicious and nutritious, they are high in potassium, fiber and Vitamin C. Mix in a can of garbanzo beans to add some protein!

Ingredients:

  • 1/2 red onion, sliced
  • 4 cucumbers, thinly sliced
  • 1 clove chopped garlic
  • 1 Tbsp olive oil
  • 3 Tbsp vinegar – rice, apple cider or balsamic
  • 1 tsp dill (optional)
  • Salt and pepper to taste
Main Ingredient(s): Cucumbers, Red Onion

Steps:

  • Combine all ingredients in a medium bowl.
  • Chill for one hour.
  • Toss and serve.
  • Enjoy!
  • Refrigerate leftovers.
