A vinaigrette is simply an oil and vinegar based salad dressing that is emulsified (blended) prior to dressing your salad. The classic ratio is 3 parts oil to 1 part vinegar, add a few additional ingredients to create an explosion of flavor that will make your summer vegetables pop! Mustard and honey makes a great combination perfect for any occasion.

Ingredients:

  • 2 cloves of garlic, finely minced
  • 2 Tbsp. of mustard *
  • 1/4 cup oil
  • 3 Tbsp. vinegar **
  • 1 Tbsp. honey
  • 1 Tbsp. water
  • Salt and pepper, to taste

*Dijon, brown or grain mustards are best.

**Red wine, cider or balsamic vinegar preferred.

Main Ingredient(s): Garlic, Greens

Steps:

  • Put all ingredients into a jar with a tight fitting lid. Shake vigorously to mix.
  • Taste and adjust seasoning.
  • Shake well prior to using.
