Buttercup Squash & Apple Bake

Fresh from the vine doesn’t apply to the buttercup squash, before eating it needs to be cured. Who knew? Not me. I always thought of curing as a way to preserve meat, fish or vegetables; think pepperoni, salmon gravlax and fermented sauerkraut. It never occurred to me that most, not all, winter squash is cured. Curing takes place off the vine after the squash has matured and been harvested. This process is needed for the squash to ripen. For most winter squash this means 2-3 weeks of waiting. The sweet spot for buttercup squash is actually 3-6 months after harvesting. However, you don't have to wait that long but if you can it's worth it. Either way, our recipe for Buttercup Squash & Apple Bake is a great way to celebrate the flavors of Vermont.
