Garlic scapes are the tender stem and flower bud of a hardneck garlic plant.   Garlic scapes have a greener taste than garlic bulbs; they have a unique flavor profile, blending onion, scallion, and garlic.  The texture is close to that of asparagus, making it ideal for grilling.  Grilled Garlic Scapes can be enjoyed as a side dish, an ingredient (they are great in an omelet) or as a topping for pizza, burgers, and so much more.

Ingredients:

  • 1 Pound garlic scapes
  • 1 Tbsp. olive oil
  • Salt and pepper, to taste
  • Lemon (optional)

Steps:

  • Wash and dry the garlic scapes.
  • Trim the ends. Leave scape whole.
  • Drizzle with olive oil and lightly toss.
  • For cooking, evenly space out on the surface of a hot (not flaming) grill.
  • Grill about 4 minutes per side until the garlic scapes are tender with a delicate char.
  • Remove from grill, season with salt and pepper.
  • To brighten the flavor squeeze a lemon wedge over grilled garlic scapes.
