This beet and carrot slaw is quick and easy to make and goes great as a side to any protein. This dish is fresh, crunchy, nutrient rich and the sesame flavor really stands out! Top with fresh parsley as an optional add in. This recipe makes 4-6 servings.

Ingredients:

  • 2 Medium sized beet, peeled
  • 3 Carrots
  • 1/4 Cup rice wine vinegar
  • 1/4 Cup sesame oil
  • 1/4 Cup sesame seeds (optional)
Main Ingredient(s): Beets, Carrots

Steps:

  • Shred beets and carrots
  • Add oil, vinegar, and sesame seeds. Mix and serve!
