Our recipe for Kale & Apple Salad celebrates the flavors of fall. Chiffonades of crunchy kale are combined with thin slices of crisp, juicy apple and our signature Honey Mustard Vinaigrette for a flavorful, simple salad.  Kale & Apple Salad pairs well with soups and sandwiches, is a great addition to wraps and is amazing served with baked ham. For added pizazz top with nuts, seeds, and dried fruits.

Ingredients:

  • 3-4 cups kale, small chop
  • 1 small apple, cored and sliced thin
  • 1 tsp. olive oil
  • 2 Tbsp dressing *
  • Salt/pepper, to taste

Steps:

  • Strip washed kale leaves off stems. Chiffonade (cut in long, thin strips) or small chop  and place in large bowl.

  • Add olive oil to the bowl and massage the kale for few minutes, until it becomes bright green and softens. **
  • Core washed apple, cut in half and slice thinly. Add to massaged kale.
  • Add dressing, toss well to mix. Taste and adjust seasoning. Serve at room temperature.

** If not serving immediately, skip this step.  Dressing will soften kale.
