This quick recipe makes 4-6 servings. Sautéed summer squash is delicious and vitamin rich. This is the perfect, fresh tasting side dish to serve on a hot summer day. For added flavor you can mix in red pepper flakes, basil, or any other of your favorite spices or herbs.

Ingredients:

  • 3 medium summer squash or zucchini, sliced
  • 1 Tbsp. oil
  • 1 medium onion, sliced thinly or diced
  • salt & pepper, to taste
Main Ingredient(s): Onions, Summer Squash

Steps:

  • Heat oil in large skillet.
  • Add onion and cook until softened.
  • Slice squash or zucchini into ¼ inch coins and add to pan. Cook over medium heat, stirring until squash begins to soften.
  • Cook to taste–10-15 minutes, or until desired texture is reached.
  • Add salt and pepper to taste and serve warm.
