This Fresh Salsa is the perfect summer snack. Enjoy this salsa with tortilla chips, add it to scrambled eggs, top a baked potato, or mix it in with some salad greens. Don’t’ forget- Tomatoes are a great source of potassium and vitamin C!

Ingredients:

  • 5-6 tomatoes, chopped
  • 1 green bell pepper or 1-2 Jalapeños for spice, diced into small pieces
  • 1 onion, diced
  • 2 Tbsp lime juice
  • 1 Tsp salt
  • Optional:1/4 cup cilantro,
Main Ingredient(s): Bell Peppers, Onions, Tomatoes

Steps:

  • Stir together tomatoes, pepper, onion, cilantro, lime juice and salt. Enjoy!
