No shelling needed! Snow peas are not your usual pea in the pod; with a sweet, flat pod and the tiniest of peas the snow pea is meant to be enjoyed pod and all. Snow peas have a sweet, mild, grassy flavor.  They have a nice crispness when raw and a firm but tender texture when cooked.  Snow Peas Sautéed with Garlic is easy to prepare and ready in minutes, the flavor is simply delightful.

FYI: Despite their delicate appearance, snow peas are quite hardy.  They can be planted at the tail end of winter and are able to handle light frost or a bit of snow.  Hence the name, snow pea.

Ingredients:

  • 1/2-pound, Snow peas
  • 1 Tbsp. Olive oil
  • 1 clove Garlic, chopped
  • Salt & pepper to taste

Storage Tip:  Store unwashed in airtight container, like a bag with air removed, in the crisper drawer of the refrigerator.  When stored properly snow peas will hold 4-6 days.

Steps:

  • Trim snow peas by removing stem and string. Wash well.

  • To a large skillet add about 1 inch of water. Bring to a boil, add a good pinch of salt. Add snow peas and cover. Quickly drain after 45 seconds, do not overcook. Wipe out skillet, removing water. Add olive oil to skillet, when oil begins to shimmer (30 seconds or so) add garlic. When garlic begins to brown add snow peas. Sauté for a minute to finish cooking and heat through. Tossing to evenly coat.

  • Salt & pepper to taste. Serve hot and enjoy!
