Tomato Bruschetta celebrates the sweetness of ripe tomatoes, savory garlic, fresh basil and olive oil; all combined and served atop slices of toasted bread.  Our recipe is flavorful and so easy to make. Serve as an appetizer or snack,  or enjoy with eggs or along side soup or salad.

Ingredients:

  • 6 or 7 ripe plum or heirloom tomatoes (about 1 1/2 lbs)
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 1 Tbsp extra virgin olive oil
  • 6-8 fresh basil leaves, chopped
  • Toasted bread

Steps:

  • Finely chop tomatoes and place in a large bowl.
  • Add minced garlic, olive oil, vinegar and basil leaves.
  • Season with salt and pepper to your liking.
  • To toast bread for bruschetta, preheat oven to 450°F. Slice bread and drizzle with olive oil. Place in oven and toast for 5-6 minutes or until lightly brown.

    To grill bread for bruschetta, pre heat grill. Slice bread and brush with olive oil.  Grill on each side for 1-2 minutes.
