Our recipe for Tomato Bruschetta celebrates the sweetness of ripe tomatoes, savory garlic, fresh basil and olive oil; all combined and served atop slices of toasted bread.  Our recipe is delicious and so easy to make. Makes a great appetizer or snack; delicious served with eggs or along side soup or salad.

Ingredients:

  • 6 or 7 ripe plum or heirloom tomatoes (about 1 1/2 lbs)
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 1 Tbsp extra virgin olive oil
  • 6-8 fresh basil leaves, chopped
  • Toasted bread
Main Ingredient(s): Basil, Garlic, Tomatoes

Steps:

  • Finely chop tomatoes and place in a large bowl.
  • Add minced garlic, olive oil, vinegar and basil leaves.
  • Season with salt and pepper to your liking.
  • To toast bread for bruschetta, preheat oven to 450°F. Slice bread and drizzle with olive oil. Place in oven and toast for 5-6 minutes or until lightly brown.

    To grill bread for bruschetta, pre heat grill. Slice bread and brush with olive oil.  Grill on each side for 1-2 minutes.
